Short Rib Pizza with Smoked Gouda Cream Sauce features tender braised beef layered over a rich smoked cheese sauce on a crisp pizza crust.
2 pounds bone-in beef short ribs
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 small onion chopped
2 cloves garlic minced
1 tablespoon tomato paste
1/2 cup red wine
2 cups beef broth
2 sprigs fresh thyme
1 pound pizza dough
1 tablespoon butter
1 tablespoon all-purpose flour
1 cup heavy cream warmed
1 1/2 cups shredded smoked Gouda
1/2 cup shredded mozzarella optional
1/4 cup thinly sliced red onion optional
Fresh parsley or arugula for garnish
Preheat oven to 325°F and season short ribs.
Sear ribs in olive oil until browned, then remove.
Cook onion, garlic, and tomato paste in same pot.
Add wine and reduce, then add broth and thyme.
Return ribs, cover, and braise 2 1/2 to 3 hours.
Shred meat and set aside.
Make roux with butter and flour, whisk in cream, then add Gouda until smooth.
Preheat oven to 475°F and prepare dough.
Spread sauce on dough, top with short rib and cheese.
Bake 12 to 15 minutes until golden.
Garnish and slice.
Prepare short ribs in advance for convenience. Use high heat to achieve crisp crust.
