Ingredients

4 bone-in pork chops
1 1/2 pounds baby potatoes halved
2 tablespoons olive oil
3 cloves garlic minced
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon paprika
Salt to taste
Black pepper to taste
1 tablespoon fresh lemon juice
Chopped parsley optional

Instructions

  1. Preheat oven to 400°F and prepare a sheet pan.

  2. Toss potatoes with olive oil, garlic, and seasonings.

  3. Roast potatoes for 10 minutes.

  4. Season pork chops with olive oil and spices.

  5. Add pork chops to pan and roast 18 to 22 minutes until internal temperature reaches 145°F.

  6. Broil briefly if desired.

  7. Rest 5 minutes and finish with lemon juice before serving.
