Ingredients

2 cans 15 ounces each chickpeas drained and rinsed
1/3 cup dried cranberries
1/4 cup finely diced red onion
1/4 cup crumbled feta cheese
2 tablespoons chopped fresh parsley or mint
3 tablespoons fresh lemon juice
2 tablespoons extra virgin olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper

Instructions

  1. Rinse and drain chickpeas, then pat dry.

  2. Combine chickpeas, cranberries, red onion, and herbs in a bowl.

  3. Whisk lemon juice, olive oil, salt, and pepper.
