1 1/2 pounds boneless skinless chicken thighs or breasts
2 tablespoons butter
1 tablespoon neutral oil
1 small onion, finely diced
3 cloves garlic, minced
1 tablespoon grated fresh ginger
1 1/2 cups tomato puree
1 teaspoon garam masala
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon paprika
1/2 teaspoon turmeric
1/2 teaspoon chili powder optional
3/4 cup heavy cream
Salt to taste
1 tablespoon chopped fresh cilantro
Cut chicken into bite-sized pieces.
Heat butter and oil in a large skillet over medium heat.
Cook chicken until lightly browned, then remove from pan.
Sauté onion until soft, then add garlic and ginger.
Stir in spices and cook briefly.
Add tomato puree and simmer for 8 to 10 minutes.
Return chicken to pan and simmer until cooked through.
Stir in heavy cream and cook gently for 2 to 3 minutes.
Garnish with cilantro and serve.
