One-Pot Sausage and Rice Skillet is a hearty dinner made with smoky sausage, tender rice, vegetables, and savory broth cooked together in one pan.
12 ounces smoked sausage sliced
1 tablespoon olive oil if needed
1 small onion diced
1 bell pepper diced
3 cloves garlic minced
1 cup long-grain white rice
2 cups low-sodium chicken broth
1 can 14 ounces diced tomatoes with juices
1 teaspoon paprika
1/2 teaspoon dried oregano
1 teaspoon salt divided
1/2 teaspoon black pepper
Brown sausage in a large skillet and remove.
Sauté onion and bell pepper until softened.
Add garlic and cook briefly.
Stir in rice and toast for 1 to 2 minutes.
Add broth, tomatoes, and seasonings.
Return sausage to skillet and bring to a boil.
Cover and simmer 18 to 20 minutes.
Rest covered 5 minutes, then fluff and serve.
