12 ounces fettuccine or linguine
4 cloves garlic, minced
2 tablespoons butter or olive oil
2 cups chicken or vegetable broth
1 1/2 cups heavy cream
1 cup freshly grated Parmesan cheese
Salt to taste
Black pepper to taste
2 tablespoons chopped fresh parsley optional
Pinch red pepper flakes optional
Heat butter or olive oil in a large pot over medium heat.
Add minced garlic and cook until fragrant, about 1 minute.
Pour in broth and heavy cream and bring to a gentle simmer.
Add uncooked pasta and stir frequently as it cooks.
Simmer for 10 to 12 minutes until pasta is tender and sauce thickens.
Remove from heat and stir in Parmesan cheese.
Season with salt and pepper.
Garnish with parsley and red pepper flakes if desired.
Stir frequently to prevent sticking. Add extra broth if sauce reduces too quickly. Use freshly grated Parmesan for smooth melting.
