2 large boneless skinless chicken breasts sliced into cutlets
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup all-purpose flour
2 tablespoons olive oil
3 tablespoons butter
3 cloves garlic minced
1/2 cup chicken broth
1/4 cup fresh lemon juice
1/4 cup heavy cream optional
1 tablespoon chopped fresh parsley

Instructions

  1. Slice and season chicken, then dredge lightly in flour.

  2. Sear in olive oil 4 to 5 minutes per side until golden and cooked through.

  3. Remove chicken and melt butter in skillet.

  4. Add garlic and cook briefly.

  5. Stir in broth and lemon juice; simmer 3 to 5 minutes.

  6. Add cream if using and simmer until slightly thickened.

  7. Return chicken to skillet and spoon sauce over top.

  8. Garnish with parsley and serve.
