Healthy Chicken and Vegetables Skillet features tender chicken and colorful vegetables cooked together in one pan for a quick and nourishing meal.

Ingredients

1 1/2 pounds boneless skinless chicken breasts cut into pieces
2 tablespoons olive oil
3 cloves garlic minced
1 red bell pepper sliced
1 yellow bell pepper sliced
1 medium zucchini sliced
2 cups broccoli florets
1 cup cherry tomatoes
1 teaspoon dried oregano
1/2 teaspoon dried thyme
Salt to taste
Black pepper to taste
1 tablespoon fresh lemon juice
Chopped parsley optional

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Cook chicken until golden and internal temperature reaches 165°F. Remove and set aside.

  3. Sauté garlic briefly.

  4. Add broccoli and bell peppers and cook until slightly tender.

  5. Add zucchini and cherry tomatoes and season with herbs, salt, and pepper.

  6. Return chicken to skillet and toss to combine.

  7. Finish with lemon juice and parsley before serving.

Notes

Do not overcrowd the skillet. Adjust vegetables based on season and preference.
