French Onion Chicken Orzo Casserole combines caramelized onions, tender chicken, creamy orzo, and melted Gruyère cheese in a comforting baked dish.
2 tablespoons butter
1 tablespoon olive oil
3 large yellow onions thinly sliced
2 cloves garlic minced
1 1/2 pounds boneless skinless chicken breasts or thighs diced
1 teaspoon salt divided
1/2 teaspoon black pepper
1 1/2 cups dry orzo
2 1/2 cups beef broth
1/2 cup heavy cream
1 teaspoon fresh thyme leaves or 1/2 teaspoon dried thyme
1 teaspoon Worcestershire sauce optional
1 1/2 cups shredded Gruyère cheese
Preheat oven to 375°F and grease a casserole dish.
Cook onions in butter and olive oil with a pinch of salt for 20 to 25 minutes until caramelized.
Stir in garlic and cook 1 to 2 minutes.
Add diced chicken, remaining salt, and pepper. Cook 5 to 7 minutes.
Stir in orzo, broth, cream, thyme, and Worcestershire sauce.
Transfer mixture to casserole dish and cover with foil.
Bake 20 minutes, then stir.
Top with Gruyère and bake uncovered 10 to 15 minutes until tender and golden.
Rest 5 to 10 minutes before serving.
