12 ounces smoked sausage sliced
2 large sweet potatoes peeled and cubed
1 red bell pepper sliced
1 small red onion sliced
2 tablespoons olive oil divided
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon smoked paprika
Honey Garlic Sauce:
3 tablespoons honey
3 cloves garlic minced
2 tablespoons low-sodium soy sauce
1 tablespoon apple cider vinegar or lemon juice
1 teaspoon olive oil
Preheat oven to 425°F and line a sheet pan.
Toss sweet potatoes with olive oil, salt, and pepper; roast 10 minutes.
Mix sausage and vegetables in a bowl.
Whisk honey garlic sauce ingredients.
Toss sausage and vegetables with half the sauce.
Add to pan with sweet potatoes and roast 15 to 20 minutes.
Drizzle remaining sauce and roast until caramelized.
Rest briefly before serving.
