Easy & Zesty Shrimp Avocado Rice Bowl Recipe with Cilantro Lime Sauce features seasoned shrimp, creamy avocado, fresh vegetables, and a tangy herb sauce over fluffy rice.

Ingredients

1 pound large shrimp peeled and deveined
2 tablespoons olive oil divided
1/2 teaspoon garlic powder
1/2 teaspoon paprika
Salt to taste
Black pepper to taste
Juice of 1 lime
3 cups cooked rice
1 avocado diced
1 cup cherry tomatoes halved
1 cup diced cucumber
1/4 cup thinly sliced red onion
1/2 cup corn kernels

For the cilantro lime sauce:
1/2 cup plain Greek yogurt
1/4 cup fresh cilantro
2 tablespoons fresh lime juice
1 tablespoon olive oil
1 small clove garlic
Salt to taste

Instructions

  1. Cook rice and set aside.

  2. Toss shrimp with olive oil, garlic powder, paprika, salt, pepper, and lime juice.

  3. Cook shrimp 2 to 3 minutes per side until pink and opaque.

  4. Blend sauce ingredients until smooth.

  5. Assemble bowls with rice, shrimp, avocado, and vegetables.

  6. Drizzle with cilantro lime sauce and serve.

Notes

Do not overcook shrimp. Add avocado just before serving for best texture.
