8 ounces lo mein noodles or spaghetti
1 pound boneless skinless chicken breast thinly sliced
2 tablespoons neutral oil divided
3 cloves garlic minced
1 teaspoon grated fresh ginger
1 cup shredded cabbage
1/2 cup julienned carrots
1/2 cup sliced bell peppers
1/2 cup snow peas
2 green onions sliced

Sauce:
1/4 cup low-sodium soy sauce
2 tablespoons oyster sauce
1 teaspoon sesame oil
1/2 cup chicken broth
1 tablespoon cornstarch

Instructions

  1. Cook noodles until al dente and drain.

  2. Whisk sauce ingredients together.

  3. Stir-fry chicken in oil until cooked; remove.

  4. Sauté garlic and ginger briefly.

  5. Add vegetables and cook 2 to 3 minutes.

  6. Return chicken and add noodles.

  7. Pour sauce over and toss until thickened.

  8. Stir in green onions and serve.
