Creamy Gnocchi with Spinach and Feta is a comforting skillet dinner featuring tender gnocchi in a light creamy sauce with fresh spinach and tangy feta.

Ingredients

1 pound potato gnocchi
1 tablespoon olive oil
1 small shallot finely diced
2 cloves garlic minced
1 cup vegetable broth
3/4 cup half-and-half or light cream
4 cups fresh baby spinach
3/4 cup crumbled feta cheese
1 tablespoon fresh lemon juice
1/4 teaspoon black pepper
Pinch red pepper flakes optional
Salt to taste

Instructions

  1. Boil gnocchi in salted water until they float, then drain.

  2. Heat olive oil in a skillet and sauté shallot for 3 to 4 minutes.

  3. Add garlic and cook 30 seconds.

  4. Stir in vegetable broth and simmer 3 to 4 minutes.

  5. Add half-and-half and simmer 5 minutes until slightly thickened.

  6. Stir in spinach until wilted.

  7. Add cooked gnocchi and toss to coat in sauce.

  8. Remove from heat and stir in feta and lemon juice.

  9. Season with pepper and red pepper flakes if desired.

Notes

Do not overcook gnocchi to maintain texture. Adjust salt carefully due to feta.
