12 ounces smoked sausage sliced
1 tablespoon olive oil if needed
1 small onion diced
1 bell pepper diced
3 cloves garlic minced
1 cup long-grain white rice
2 cups low-sodium chicken broth
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon dried oregano
1 teaspoon salt divided
1/2 teaspoon black pepper
1 can 15 ounces black beans drained and rinsed
1 tablespoon fresh lime juice
2 tablespoons chopped fresh cilantro
Brown sausage in a pot over medium heat, then remove.
Sauté onion and bell pepper until softened.
Add garlic and cook briefly.
Stir in rice and toast for 1 to 2 minutes.
Add broth and seasonings; bring to a boil.
Cover and simmer 15 minutes.
Stir in black beans and sausage; cook 5 to 7 minutes more.
Rest covered 5 minutes, then fluff.
