Black Beans and Rice with Sausage is a one-pot meal featuring smoky sausage, tender black beans, and seasoned rice simmered together for a hearty dinner.

12 ounces smoked sausage sliced
1 tablespoon olive oil if needed
1 small onion diced
1 bell pepper diced
3 cloves garlic minced
1 cup long-grain white rice
2 cups low-sodium chicken broth
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon dried oregano
1 teaspoon salt divided
1/2 teaspoon black pepper
1 can 15 ounces black beans drained and rinsed
1 tablespoon fresh lime juice
2 tablespoons chopped fresh cilantro

Instructions

  1. Brown sausage in a pot over medium heat, then remove.

  2. Sauté onion and bell pepper until softened.

  3. Add garlic and cook briefly.

  4. Stir in rice and toast for 1 to 2 minutes.

  5. Add broth and seasonings; bring to a boil.

  6. Cover and simmer 15 minutes.

  7. Stir in black beans and sausage; cook 5 to 7 minutes more.

  8. Rest covered 5 minutes, then fluff.

  9. Finish with lime juice and cilantro before serving.

Notes

Use brown rice for added fiber but adjust liquid and cooking time. Add diced tomatoes for extra flavor if desired.
